Ingredients

  • Maravilla Oil
  • ½ cup of Harina Selecta®
  • 8 pieces of zucchini
  • 250 g of panela or Manchego cheese
  • 300 g of diced turkey ham
  • 4 eggs (with the whites and yolks separated)
  • 8 tomatoes, previously chopped
  • ¼ white onion
  • 1 clove of garlic
  • 3 cups of chicken broth

Preparation

  • In a large pot, add enough water and bring it to a boil over medium-high heat. Once it's boiling, add the zucchini, with the stems removed. Once they're tender, remove them and set aside.
  • Once the zucchini have cooled, slice them into rounds, since we'll be making a kind of "mini-burger," then stuff the zucchini with ham and cheese.
  • In a bowl, place the Harina Selecta® and dredge the zucchini “mini-burgers” in the flour. Repeat this process with the rest of them, set them aside, and in another bowl, add the egg whites and beat until stiff peaks form. Then add the egg yolks and beat well until the mixture is smooth.
  • Dip the floured zucchini in the egg mixture to coat them.
  • Meanwhile, pour some Aceite Maravilla into a skillet, and once it's hot, add the zucchini. Cook thoroughly on both sides (until golden brown). Remove and set aside.
  • For the tomato broth, add enough water to a pot over medium-high heat and add the tomatoes, onion, and garlic. Once the tomatoes are soft, place the ingredients in a blender along with a little chicken broth and blend well to make a tomato sauce.
  • In a pot, add a splash of oil, and once it's hot, sauté the tomato sauce along with the chicken broth. Remember to reduce it a little so it becomes a broth. Season to taste and bring to a boil.
  • To serve, arrange the zucchini on a plate and pour the tomato sauce over them. Enjoy!
